Juicing Your Way to More Energy: Carrot Juice

Carrots are superb vegetables that provide numerous minerals and vitamins to the body. Through these vitamins and minerals, carrots help maintain and improve our health. Just a few ways carrots benefit the body include strengthening eyesight, the immune system, heart, blood, mouth, brain, and they help protect the body against cancer.

 

You can enjoy juiced carrots in many ways and combinations. The simplest is to juice carrots on their own.

 

Ingredients:

5-7 large carrots

splash of water (optional)

 

makes one serving

 

Directions:

1. Wash carrots thoroughly and chop off the black/green top. Cut off any dark bits on the carrots, or peel them if you'd like.

2. Cut into smaller pieces and place in juicer. If using a blender, cut carrots into smaller pieces and add a splash of water to help blend well. Transfer into a drinking glass and enjoy!

3. Optional: once carrots are blended, strain juice through a mesh strainer into a bowl. If you don't have quite enough juice for one cup, add water. 

 

You can use carrot juice as a base and add more ingredients. For instance, add a bit of fresh ginger for an extra energy boost. Simply peel the ginger, chop into blender or add to the juicer with your carrots. 

 

Other combinations can be:

- carrots and parsley 

- carrots with beet and spinach

- carrots and bell peppers with parsley

- carrots and tomatoes

 

Always use fresh and cleaned vegetables. You may need to alter the quantity of carrots depending on the size and what ingredient you are adding.
